Maitake is a large, ruffled cluster mushroom that grows at the base of oak and other hardwood trees, used both as a savory food and in extract form.

Maitake, meaning dancing mushroom in Japanese, grows wild at the base of oak and hardwood trees in Japan and parts of North America and has a long history in traditional Japanese and Chinese medicine, where it was valued as a tonic food for vitality. Its old Japanese name reportedly comes from the joy foragers felt on finding the large, prized cluster in the wild. In more recent decades, researchers isolated a specific compound from the mushroom, called the D-fraction, for closer study.
