🛡️ Zinc

The repair crew's foreman.

🔬 The science, kept simple

Zinc helps hundreds of enzymes build proteins, copy DNA, and heal wounds, and immune cells lean on it heavily... which is why zinc shortage shows up as slow healing, frequent colds, and dulled taste and smell.

Why you need it: Immune defense, wound healing, taste and smell, skin health, and growth.

Daily target: About 11 mg a day for men, 8 mg for women.

🥇 Best food sources, ranked

  1. Pumpkin seeds ... about 2.2 mg per ounce
  2. Lentils and chickpeas ... about 2.5 mg per cup, cooked
  3. Tempeh ... about 1.9 mg per cup
  4. Oats ... about 2.3 mg per cup, cooked
  5. Cashews ... about 1.6 mg per ounce
  6. Kefir and yogurt ... about 1-2 mg per cup

Figures are approximate, in the style of USDA FoodData Central; real foods vary with soil, variety, and cooking.

⚖️ Worth knowing

Beans and grains carry zinc but also phytates that partly block it... soaking, sprouting, and sourdough-style fermentation free it up. Long-term high-dose zinc supplements deplete copper.
