Immune-Friendly Veggie Soup

🧺 What you'll need

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 can white beans, drained and rinsed
  • 2 big handfuls of leafy greens (spinach or kale)
  • Salt and pepper to taste

  1. 1Warm the oil in a big pot and cook the onion until soft, about 5 minutes.
  2. 2Add the garlic, carrots, and celery and cook 5 more minutes.
