Immune-Friendly Veggie Soup
A cozy soup full of vegetables, garlic, and beans to comfort you when you feel run down.
🧺 What you'll need
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 can white beans, drained and rinsed
- 2 big handfuls of leafy greens (spinach or kale)
- Salt and pepper to taste

- 1Warm the oil in a big pot and cook the onion until soft, about 5 minutes.
