🔬 The science, kept simple
B12 builds red blood cells and maintains the insulation around nerves, and no ordinary plant food reliably contains it. This is the honest asterisk on every whole-food plant-based diet: it must come from fortified foods or a supplement, and pretending otherwise costs people their nerves and memory.
Why you need it: Red blood cell formation, nerve insulation, DNA synthesis, and a clear mind; deficiency can masquerade as dementia or depression and can do permanent nerve damage if ignored.
Daily target: About 2.4 micrograms a day; typical supplements are far larger because absorption per dose is small.
📖 In Scripture
Honesty is part of stewardship: those of us who eat from the garden must say plainly that this one nutrient needs help. Taking a B12 supplement is not a failure of faith in God's diet... it is wisdom.
🥇 Best food sources, ranked
- Fortified nutritional yeast ... up to 8 mcg per tablespoon, fortified brands only
- Fortified plant milks and cereals ... about 1-3 mcg per serving, check the label
- Kefir, yogurt, and eggs ... about 1 mcg per cup or two eggs
- A B12 supplement ... the reliable backstop for anyone eating mostly plants
Figures are approximate, in the style of USDA FoodData Central; real foods vary with soil, variety, and cooking.
⚖️ Worth knowing
Absorption falls with age and with acid-blocking medicines, so even meat-eaters over 50 are told to use fortified sources. Nutritional yeast is only a B12 source when FORTIFIED... check the label.
