Tofu Egg Salad
Plant-based egg salad made with mashed tofu and fresh vegetables
🧺 What you'll need
- 1 (15-16 ounce) firm water-packed Tofu, rinsed and drained
- 1/8-1/4 cup Onion, finely minced
- 1/8-1/4 cup Celery, finely minced
- 2 Tbsp. Mock Chicken Seasoning (OR 1 Tbsp. Onion Powder, 1 Tbsp. Garlic Powder)
- 1 Tbsp. Nutritional Yeast Flakes
- 1/2 tsp. Salt
- 1/2 tsp. Dill Weed
- 1-2 Tbsp. Lemon Juice
- 1/3 cup Vegenaise or plant-based Mayonnaise

- 1MASH Tofu until consistency of egg salad
- 2STIR in Onion, Celery, Mock Chicken Seasoning, Nutritional Yeast Flakes, Salt, Dill Weed, Lemon Juice, and Vegenaise
