Stuffed Shells
Jumbo pasta shells stuffed with seasoned tofu and topped with marinara sauce
🧺 What you'll need
- 1 box Jumbo Stuffing Shells
- 1 Diced Onion
- 1-2 Tbsp. Olive oil
- 2-3 Crushed Cloves of Garlic or 2 tsp. Garlic Powder
- 2-14 oz pkg. firm Tofu
- 4 Tbsp. Nutritional Yeast
- 1 Tbsp. Onion Powder
- 1 Tbsp. Garlic Powder
- 1-2 tsp. Salt
- 1/2 tsp. Dried Basil
- 1/2- 3/4 cup Vegenaise or plant-based Mayonnaise
- 1-2 Tbsp. Lemon Juice
- 2 (16oz) cans Marinara Sauce
👩🍳 How to make it
- 1BOIL water in large pot and follow package cooking instructions for shells
- 2DRAIN noodles well
- 3SAUTÉ onion and garlic and any extra vegetables in olive oil together until tender in a medium skillet on medium heat
- 4DRAIN tofu of excess water and crumble into a large bowl
- 5ADD sautéed vegetables
- 6ADD Nutritional Yeast, Onion Powder, Garlic Powder, Salt, Dried Basil, Vegenaise, and Lemon Juice to tofu and mix well
- 7SPREAD a thin layer of sauce into a 9x13 casserole dish (saving some for the top)
- 8STUFF cooked shells with tofu mixture and line in the casserole dish
- 9SPREAD remaining sauce on top of the shells
- 10BAKE at 350 degrees for 30 minutes
