Scalloped Potatoes

Creamy layered potatoes and onions with coconut milk sauce

🧺 What you'll need

  • 6 cups thinly sliced Potatoes (about 4 potatoes)
  • 1 Onion, sliced in rings
  • 1 (16oz) can Coconut Milk (full fat is best)
  • 1 cup Water or more
  • 2 Tbsp. Onion Powder
  • 1 Tbsp. Garlic Powder
  • 1 Tbsp. Salt
  • Paprika

  1. 1PLACE potatoes and onions into a 9x13 casserole dish
  2. 2COMBINE Coconut Milk, Water, Onion Powder, Garlic Powder, and Salt, then pour over potatoes
  3. 3Press to partly cover potatoes in the liquid
  4. 4Sprinkle with paprika, if desired
  5. 5BAKE covered at 400 degrees for 45 minutes
  6. 6UNCOVER and bake 15 more minutes
