Scalloped Potatoes
Creamy layered potatoes and onions with coconut milk sauce
🧺 What you'll need
- 6 cups thinly sliced Potatoes (about 4 potatoes)
- 1 Onion, sliced in rings
- 1 (16oz) can Coconut Milk (full fat is best)
- 1 cup Water or more
- 2 Tbsp. Onion Powder
- 1 Tbsp. Garlic Powder
- 1 Tbsp. Salt
- Paprika

- 1PLACE potatoes and onions into a 9x13 casserole dish
- 2COMBINE Coconut Milk, Water, Onion Powder, Garlic Powder, and Salt, then pour over potatoes
- 3Press to partly cover potatoes in the liquid
- 4Sprinkle with paprika, if desired
- 5BAKE covered at 400 degrees for 45 minutes
- 6UNCOVER and bake 15 more minutes
