Rainbow Veggie Stir-Fry
A quick, colorful plate of vegetables over brown rice — light, filling, and heart-friendly.
🧺 What you'll need
- 1 cup cooked brown rice (per person)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 sweet bell pepper, sliced
- 1 carrot, thinly sliced
- 1 handful of snap peas or green beans
- 1 tablespoon low-sodium soy sauce or tamari
- A squeeze of lemon, to finish
👩🍳 How to make it
- 1Warm the oil in a large pan over medium-high heat.
- 2Add the garlic and stir for about 30 seconds, until fragrant.
- 3Add the carrot and broccoli first and cook for 3 minutes.
- 4Add the pepper and snap peas and cook 3 more minutes, until just tender but still bright.
- 5Stir in the soy sauce, take it off the heat, and finish with a squeeze of lemon. Serve over brown rice.
