Rainbow Veggie Stir-Fry

A quick, colorful plate of vegetables over brown rice — light, filling, and heart-friendly.

🧺 What you'll need

  • 1 cup cooked brown rice (per person)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 sweet bell pepper, sliced
  • 1 carrot, thinly sliced
  • 1 handful of snap peas or green beans
  • 1 tablespoon low-sodium soy sauce or tamari
  • A squeeze of lemon, to finish

👩‍🍳 How to make it

  1. 1Warm the oil in a large pan over medium-high heat.
  2. 2Add the garlic and stir for about 30 seconds, until fragrant.
  3. 3Add the carrot and broccoli first and cook for 3 minutes.
  4. 4Add the pepper and snap peas and cook 3 more minutes, until just tender but still bright.
  5. 5Stir in the soy sauce, take it off the heat, and finish with a squeeze of lemon. Serve over brown rice.
