Mushroom Gravy

Rich mushroom gravy made with cashews and vegetable broth

🧺 What you'll need

  • 1 small can Mushrooms, with the juice
  • 2 Tbsp. Cornstarch
  • 1 Tbsp. Better Than Bouillon (Vegetable base) paste (or vegetarian beef seasoning + 1/2 tsp. salt)
  • 2 cup Water
  • 2/3 cup Raw Cashews (If using Non-High-Power Blender: Soak Cashews overnight or boil for 5 minutes) or 1/2 block tofu and decrease water to 1 cup

  1. 1BLEND everything except mushrooms until smooth
  2. 2ADD mushrooms and blend briefly
  3. 3HEAT on medium-low in a pan until thick
