Minestrone Soup
Vegetable and bean soup with pasta in a tomato broth
🧺 What you'll need
- 4 cups Vegetable Broth (Better Than Bullion paste with water, preferred)
- 2 fresh Carrots, sliced
- 1 medium Onion, chopped
- 2 cans (15 ounces) beans, rinsed and drained (Kidney, Great Northern, Garbanzo, etc.)
- 1 can Green Beans
- 1 fresh Zucchini, chopped (optional)
- 3/4 cup small pasta - Whole wheat if possible (shells, macaroni, etc.)
- 1 tsp. dried Basil
- 1 can (15 ounces) diced tomatoes, Italian or regular, undrained

- 1SAUTE onions and carrots in a small amount of water
- 2STIR together everything with Vegetable Broth
- 3BOIL and reduce heat
- 4COVER and simmer for 10 minutes, or until pasta is tender
