Minestrone Soup

Vegetable and bean soup with pasta in a tomato broth

🧺 What you'll need

  • 4 cups Vegetable Broth (Better Than Bullion paste with water, preferred)
  • 2 fresh Carrots, sliced
  • 1 medium Onion, chopped
  • 2 cans (15 ounces) beans, rinsed and drained (Kidney, Great Northern, Garbanzo, etc.)
  • 1 can Green Beans
  • 1 fresh Zucchini, chopped (optional)
  • 3/4 cup small pasta - Whole wheat if possible (shells, macaroni, etc.)
  • 1 tsp. dried Basil
  • 1 can (15 ounces) diced tomatoes, Italian or regular, undrained

👩‍🍳 How to make it

  1. 1SAUTE onions and carrots in a small amount of water
  2. 2STIR together everything with Vegetable Broth
  3. 3BOIL and reduce heat
  4. 4COVER and simmer for 10 minutes, or until pasta is tender
