Corn Chowder
Creamy soup with potatoes, corn, and cashew cream
🧺 What you'll need
- 1 Onion, chopped
- 6 cups Potatoes, peeled and cubed
- Water
- 1 cup Raw Cashews
- 1/2 cup Canned Corn
- 3 1/2 cups Canned Corn
- 1/4 cup Mock Chicken Seasoning
- 1/4 c. Nutritional Yeast Flakes
- 1 tsp. Basil
- 1/2 tsp. Sage
- 1-2 tsp. Garlic Powder
- 1-2 tsp. Onion Powder
- 1 Bay Leaf (optional)
- Salt to taste
- Vegetarian Bacon Bits (optional)
👩🍳 How to make it
- 1SAUTÉ onions in a large pot
- 2ADD potatoes and enough water to cover
- 3BOIL until tender, save the water
- 4BLEND cashews with some of the saved potato water
- 5BLEND 2 cups of potato mixture with 1/2 cup of corn and the cashew mixture
- 6ADD blended ingredients to the rest of the potatoes, add water as needed
- 7MIX in 3 1/2 cups Canned Corn, Mock Chicken Seasoning, Nutritional Yeast Flakes, Basil, Sage, Garlic Powder, Onion Powder, Bay Leaf, and salt to taste
- 8WARM all ingredients together with optional Vegetarian Bacon Bits
