Black Bean Brownies

Fudgy plant-based brownies made with black beans and carob or cocoa powder

🧺 What you'll need

  • 3 cups cooked Black Beans, rinsed and drained very well or 2 (15 oz) cans of Black Beans, rinsed and drained
  • 1/4 cup Carob Powder or Cocoa Powder
  • 1 cup Quick Oats
  • 1/2 cup Unsweetened Apple Sauce or Vegetable oil or Coconut oil
  • 1/2 tsp. Salt
  • 2/3 cup Maple Syrup (Preferred) or Honey or Agave Nectar
  • 1 Tbsp. Vanilla
  • 1 tsp. Baking Powder (2 Tbsp if using Ener-G brand)
  • 1 cup Carob or dairy-free Chocolate Chips and extra for sprinkling

👩‍🍳 How to make it

  1. 1PREHEAT oven to 350 degrees
  2. 2Prepare muffin tins with cooking spray
  3. 3BLEND Black Beans, Carob Powder, Quick Oats, Apple Sauce, Salt, Maple Syrup, Vanilla, and Baking Powder in a food processor or High-Power Blender until very smooth
  4. 4MIX in Carob Chips
  5. 5POUR into muffin tins about 1/2 full of batter
  6. 6Sprinkle with chips, if desired
  7. 7BAKE for 20-30 minutes until toothpick comes out clean
  8. 8Let cool for 10 minutes before removing from pan
