Why We Cook Plant-Based

Every recipe we share follows a few old-fashioned principles — the same ones behind the NEWSTART approach woven through this site. They aren't complicated, and that's the point.

Whole foods first

Grains, fruits, vegetables, legumes, nuts and seeds, prepared in as simple and natural a manner as possible. When food stays close to the way it grew, it tends to carry its goodness with it.

Plant-based, and delicious on purpose

You'll find no meat, dairy, or eggs in our kitchen — and you won't miss them. Cashews make a creamy alfredo, flax and chia bind a cookie beautifully, and mushrooms and lentils make a loaf hearty enough for any Sabbath table.

Simple sweetness, used sparingly

We sweeten with fruit, dates, maple syrup, or a little honey — and we keep desserts as occasional joys rather than daily staples.

Gratitude is an ingredient

Food prepared with love and eaten with thanksgiving nourishes more than the body. Set the table, slow down, and enjoy it together.
